I'm sorry, but I had to toss the whole batch. I also added only an 1/8 of cinnamon and allspice each, but even that amount was overwhelming. I did what other reviewers recommended and reduced the amount of sugar (a very good suggestion). I should have known when I saw the cinnamon and allspice that something was seriously wrong with this recipe-should have gone with my gut, but I fell for the rave reviews. Easy to reduce sugar and spices to make it your own. Much nicer than processed store-bought ketchup. It's a fresh, tangy version of ketchup, but don't expect Heinz. So far the ketchup tastes good warm so I can't wait to try it after its refrigerated overnight.

Plus I added a full can of the paste so not to waste it. Since I used puréed tomatoes, I didn't have to use a blender plus I liked the bits of onion and garlic in the ketchup.
I had to add another 1/4 cup of brown sugar to take away some of the vinegar taste. I only kept the onion and garlic but I added a 1 teaspoon of salt. I found this recipe to be easy to make without the having add the list of spices it called for. It had the consistency of spaghetti sauce. It tasted more like a very sweet tomato sauce. It definitely didn't taste like ketchup, and it even didn't taste like a BBQ sauce. Now, what do I do with all this left over ketchup? Both recipes were flavorful and just right. I used it to make "Homemade Meatloaf" (see recipe), with some in the meat, and some on top. I didn't puree it at the end, either, just left the minced onion and garlic pieces, which tasted great. I added all the ingredients, including a little mustard (1/4 teaspoon). I used three cans of tomato paste and 2 cans of tomato sauce instead of whole tomatoes pureed in a blender. I was skeptical about this recipe, given other reviews, so I modified it. This tastes WAY better, fresher and a bunch more sophisticated. If you think this ketchup is going to taste like the plain stuff from the grocery store you will be disappointed. Use a splash screen if you have one or you will be cleaning splatter for a week! This made 16 ounces of ketchup. This simmered for an hour to make a thick consistency. I love the flavor that smoke imparts! Halve the cinnamon and the allspice. I also split the paprika to 1/4 tsp regular and 1/4 tsp smoked. I cut the sugar down to a little less than 1/8 cup. I used tomatoes I canned last year - nice way to make room for this years crop. I followed this recipe like I did last year but, like last year, I made adjustments. I usually make 2 types, the first has horseradish, the second has jalapeno.
